Ingredients for Chilli Chocolate Hot Truffles
- 250 grams good-quality chocolate bar, 70% extra dark chocolate bar
- 25 grams butter
- 125 milliliters double cream
- 50 grams unsweetened cocoa powder
- 1 heaping handful of hazelnuts (toasted)
- sea salt
- chili powder
Chop the chocolate bar into small chunks. Place them in a small mixing bowl. Next, in a saucepan, heat the double cream on the stove until boiling and add the butter. Switch off the heat.
Pour the hot cream mixture directly over the little chocolate pieces. Allow it to stand for about 2 to 3 minutes. Wait until the chocolate is melted. In case the chocolate does not melt completely, heat it in the microwave for 15 seconds.
Once the chocolate is melted, gently stir the mixture and let it cool for a few minutes. Then, give it another stir to ensure that everything is mixed well.
Cover the bowl with cling wrap and set it in the refrigerator for 2 hours, or until the chocolate ganache has set. Keep in mind that it should be scoopable.
Prepare the toasted hazelnuts. Add them to a food processor. Then, blitz them until they become fine bits. Remove and place them in a bowl.
Place the cocoa powder in another bowl for rolling. With a melon baller or a teaspoon, scoop up some amounts of the hardened truffle mixture. Set those little balls on a shallow bowl or plate.
It is highly advisable to work with 10 chocolate truffles at a time. After that, roll them around in your hands to form beautiful chocolate balls. Coat the truffles with cocoa powder and blitzed hazelnuts.
Replicate the above process. Be sure you clean your hands before rolling truffles in the next batch.
When you have scooped out most of the truffle mixture, add in a pinch of chili powder. By doing so, unique dark chocolate truffles with a spicy kick can be made. Besides, a chilli chocolate challenge could be created.
Put both the regular chilli chocolate truffles and the surprising ones in the refrigerator for 30 minutes. This will let them firm up. Either at room temperature or chilled, you can serve those small chocolate bombs.
