- 200 grams eggs (about 4 large eggs)
- 50 grams tapioca starch
- 30 grams rice flour
- 40 grams cornflour or sweet rice flour
- 2 tablespoons liquid fruit pectin
- 180 milliliters whole milk or semi-skimmed milk; for dairy-free Yorkshire pudding, use soy milk, almond milk, or coconut milk
- 5 generous teaspoons vegetable oil or roast beef drippings

How to Make Gluten Free Yorkshire Pudding
Add the tapioca starch, pectin, flours, beaten eggs, and 4–5 pinches of salt into a large jug. Then, mix them using a manual balloon whisk until they become a nice, smooth paste.
Gradually pour the milk into the jug. Whisk the mixture again until you have a smooth batter. Cover with cling wrap and leave to rest in the refrigerator for 1 to 6 hours. It could be set aside for 24 hours too.
When hosting a Sunday roast dinner, get the batter ready. That way, you can bake the Yorkshires in the oven and rest your roasted meet for about 20 minutes at once.
Divide the beef drippings or vegetable oil amongst 10 holes of a muffin mold. For one giant Yorkshire pudding, add the oil to a 20x30cm rectangle-roasting tray. Place it in the oven to get super hot.
From the oven, take out the roasted meat. Turn the oven to 500ºF/250°C/gas 10. After that, remove the muffin tray from the oven. Place it on the hob over medium heat, so the tray’s bottom gets an even heat spread.
